Almond Macaroons
The first recipe I would like to share with you comes from my Study Abroad spring semester in London. A sure life changing experience I would never forget. This was a favorite snack of mine on the go.

Health Benefits
Almonds contain lots of healthy fats, fiber, protein, magnesium and vitamin E. The health benefits of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. They can also reduce hunger and promote weight loss. All things considered, almonds are as close to perfect as a food can get.
Great for a Passover cookery. I hope you try it & enjoy it as much as I did.
Ingredients
Ground almonds 8oz or 250g
Castor Sugar 8 oz.
White of 3 eggs
A few blanched almonds.
Directions
1.) Mix sugar and almonds,
2.) beat the egg white slightly and add sufficient to form a paste.
3.) With wet hands roll the mixture into small balls.
4.) Place on a baking tin, flatten, and put half a blanched almond on top of each.
5.) Bake in a moderate over (375 – Regulo No. 4) till set and a light biscuit colour (about 15minutes.
For Brazil Nut Macaroons.
Make as above, using ground Brazil nuts in place of the almonds, and put a thin slice of the nut on top of each.
